Beer spoilage Megasphaera bacteria is severe, as it produces strong off-flavors and aromas such as acetoin and butyric, acetic, caproic, isovaleric, and caproic acids.
Member species in this genus include Megasphaera cerevisiae (‘of beer’), Megasphaera paucivorans (‘user of a few substrates’) and Megasphaera sueciensis (‘of Swedish origin’), Megasphaera elsdenii.
